Image: Chicken Caesar Salad

This easy low-carb Chicken Bacon Caesar Salad was one of my favorite filling lunches when I was eating low-carb. It's loaded with chicken, crispy bacon, mozzarella, Parmesan, and romaine, with a little chia seed sprinkled in for good measure.

I originally created this during the period when I was following a very high-fat version of low-carb eating, so yes, my original recipe even included some of the bacon drippings. 😂 These days, I'd consider that completely optional.

One of my favorite things about this lunch was prepping the chicken ahead of time. I'd cook and dice a chicken breast while making dinner, freeze it in small portions, and then I could make this salad quickly whenever I wanted one.

Recipe details

Serves: 1
Prep Time: About 10 minutes, with precooked chicken
Net Carbs: Approximately 4.4g
Contains: Dairy; Caesar dressing may contain egg, fish, and other allergens depending on brand*

Check the labels on your bacon, cheese, and Caesar dressing if you're avoiding specific ingredients or allergens.

Ingredients

  • 1/4 cup cooked chicken breast, diced
  • 2 strips bacon
  • 4 to 6 leaves romaine lettuce
  • 1/2 cup mozzarella cheese, shredded
  • 1 tsp grated Parmesan cheese
  • 2 tbsp Caesar dressing
  • 1/2 tsp chia seeds

MAKE-AHEAD CHICKEN

I used to cook my chicken ahead of time while I was already making dinner. Once cooled, I'd dice it and refrigerate or freeze it in small portions, so I'd have cooked chicken ready for quick lunches throughout the week.

MAKE THE SALAD

break up and wash the romaine lettuce, spin dry
  1. Cut the bacon into small pieces with kitchen scissors. I find this much easier than trying to cut it after it's cooked.
  2. Cook the bacon in a skillet until crisp.
  3. Add the precooked diced chicken and heat until the chicken is hot throughout.
  4. Wash and dry the romaine. A salad spinner makes this especially easy.
  5. Tear the lettuce into a bowl and top with mozzarella, Parmesan, and chia seeds.
  6. Add the warm chicken and bacon.
  7. Drizzle with Caesar dressing and toss everything together.
Finished Caesar Salad
Combine as follows: 1. Tear up 1/2 of the romaine lettuce and place in a salad bowl.

2. Grate 1/2 of the full-fat mozzarella cheese over the lettuce.

TIP: If you're using a deep salad bowl, you can assemble the ingredients in two layers so the chicken, bacon, cheese, and dressing are distributed throughout the salad.

Image: Ham and Cheese on a Clean Keto Bun, Spread with Herb and Spice Cream Cheese, and sliced dill pickle on the side
This is my own recipe that I created from experimenting with ingredients. It is gluten-free, nut-free, dairy-free, yeast-free, and clean Keto. A similar bun of regular bread may contain as much as 20 grams of carbs!

    INGREDIENTS:
    6 large eggs, room temperature
Flaxseed, golden - 6 tbsp seeds (makes about 1/2 cup ground)
Extra Virgin Olive Oil -1/4 cup
Monkfruit Sweetener - 4 tsp (or your favourite sweetener)
    Pysllium Husk - 3 tbsp
    Chia Seed - 1 tbsp
    Hemp Hearts - 1 tbsp
    Nutritional Yeast - 1 tbsp
    Baking Powder - 1 tsp
Collagen Peptides - 1 scoop (optional)

    DIRECTIONS:
Beat the eggs with a hand mixer or immersion mixer for at least 2 minutes till frothy.

Grind the Flaxseed in a coffee grinder (or a blender on fine ground), and then put the Psyllium, Chia, and hemp together in the grinder, and grind them as well. Makes a total of 1 cup of ground ingredients.

Add rest of ingredients to the eggs, mix well.

Let sit for 5 minutes to thicken.

Spoon into a hamburger bun baking tray, or any about 4" wide baking dish or pan.

Bake for about 20-25 minutes at 375 F. Let cool in pan for 10 minutes, then move to a cooling rack.

If possible, let the buns air dry 2-3 hours before putting them in a zip-lock bag and store in the fridge or freezer.

    Makes six buns.

    1 bun = Calories: 233.4, Fat: 17.9, Sodium: 82, Carbs: 9.8, Fiber: 5.5, Sugar: 0.3, Sugar Alcohols: 2.7, Protein: 11.8, Net Carbs: 1.6

    USES:

Hamburger buns, sandwich buns, sloppy joe buns, garlic bread, toasted with your favourite toppings... even change the shape to make hot dog buns, dinner rolls, more!

    THOUGHTS AND SUGGESTIONS:

My first batch, I started out with just a cup of Flaxseed meal without the rest (Sweetener, Pysllium, Chia, Hemp, Nutritional Yeast), it was OK, but more like a muffin in texture.

So I added a few other things to try to make it more bread-like, and more nutritious.

It is very dense, more like multi-grain/whole wheat bread texture than Wonderbread, but I love it. However, it's been so many years since I had regular bread, I may not be a good judge! LOL

If you can't eat the Pysllium, Chia, or Hemp, just replace it with one of the other ingredients.

I buy most of my ingredients from Bulk Barn (a bulk food store in Canada), the rest on Amazon.

I also bought the hamburger bun pan on Amazon. But if you have anything that is about 4" wide to bake in, you can use that.

I have a small coffee grinder that I grind my ingredients. I don't think it will work as well, if you don't grind these ingredients. If you don't have a grinder, just use your blender on fine ground. Some ingredients can be bought pre-ground.

Eggs beat up higher at room temperature, so that's important.

If you try my recipe, I'd love to hear how it turned out!

    ENJOY!!
    Image: Chocolate Minute Muffin
I was reading some great low-carb chocolate recipes this morning, so I thought I would try making a Five Minute Chocolate Muffin for lunch.

I used the Five Minute Blueberry Muffin and adapted it for chocolate.

After letting it cool enough to handle, I sliced and buttered (0 g carbs/11 g fat) the Chocolate Muffin (7.8g carbs/37.7g fat), added a gluten-free pepperoni stick (1 g carbs/9 g fat), and two slices of Genoa Salami (0 g carbs/4 g fat) to make my lunch.

So my lunch today came in at a total of 8.8 grams of Net Carbs and 61.7 grams of fat. Well under my 10 carbs per meal limit! Oh, and the muffin was delicious and filling!

What's for Lunch today?I get tired of cooking and baking all the time, and it's been so long since I had a simple sandwich.

So today I decided to have a ham and cheese sandwich!

    First I made a Flaxseed Lunch Bun - takes 2 minutes in the microwave. (5 g carbs/14 g fat)

After letting it cool enough to handle, I buttered (0 g carbs/11 g fat) the English Muffin, added a slice of Havarti cheese (0 g carbs/7 g fat), a slice of deli ham (0 g carbs/1 g fat) and torn up lettuce (0/0).

Wished I had some mayonnaise to add, but it had expired. However that would have added 3 g carbs. So maybe it was just as well.

Add in a slice of pickle and three sour onions for 1 more carb total.

So my ham and cheese sandwich came in at a total of 6 grams of Net carbs and 33 grams of fat. Well under my 10 carbs per meal limit! Oh, and my sandwich was delicious!

    TOTAL NET CARBS: 6 grams
    TOTAL FAT: 33 grams
